iPhone 4 will no longer backup to my pc

A couple of days ago my iPhone 4 stopped backing up to my pc. Each time I now connect it to the pc it recognises the phone and begins synching and trying to backup then stops, with the error message, "iTunes could not backup the iPhone because the backup could not be saved on the computer". I've tried deleting the iPhone backups from the Mobile Sync folder under Users/Apple Computer etc on my hard drive. Still gives the same error message. I haven't changed anything else in iTunes over the past few days... so does anyone have any idea how I can get the phone to start backing up again?
