Do iPhone apps log history over WiFi?

Hi there I use the Facebook app for the iPhone 4 quite alot in work over the office Wi-Fi. I was wondering can my employees monitor this? I also use other social media apps such as Skype and MSN which I have running all day! Can they monitor this. They are using an Airport Extreme in work! Is it simply a connection to Facebook servers such as an IP address or is it like a list of webpages such as the history in safari. In essence I'm asking how iPhone apps connect to internet. Is it HTTP or access or via servers and IP addresses. Thanks very much.
